Department of Dairy, Fat and Cosmetics

Welcome to the website of the Department of Dairy, Fat and Cosmetic Science of the University of Chemistry and Technology, Prague, Czech Republic.

We are engaged in scientific and pedagogical activities in the field of food microbiology focused on lactic acid bacteria, chemistry and technology of milk and all dairy products, oils and fats, as well as chemistry and technology of detergents and cosmetics.
The bulk of our work is in the use of probiotic bacteria and functional properties of lactic acid bacteria, isolation and utilization of milk constituents, texture evaluation and rheological properties of dairy and fat products, oxidative stability of fats and also the synthesis and use of surfactants in detergents and cosmetics.
